We have taken all that you loved about a traditional Gaucho parrilla and supercharged it with modern technology. Our Argentinian-inspired grill line will outlast any other wood bbq pit or charcoal kettle on the market. When you decide to bring one of our Argentine grills home, you’re making an investment in a cooker that will serve you long term versus a cheap, expendable alternative. Our pits are easy to use and grill up restaurant quality dishes every time. While they function similar to our traditional Santa Maria Grills with height adjustable grates, our Argentinian grills have some unique features including a sleek architectural design, brick lined floor and sidewalls for heat retention, and an upper rack perfect for offloading or resting finished cuts. The adjustable rotisserie spit is also a nice addition if you’d like a combination roaster.
We’ve built thousands of grills over the years and have found exactly what works best in the world of live fire barbecue grills. This is our list of essential features:
First, we know that the first point of breakdown in any wood or charcoal grill is the firebox where the high heat is concentrated. We’ve strengthened our fireboxes to withstand high heat by folding the tub into a fully formed box and completely welded the four seams. We then line them with firebrick, walls and floor. We’ve cut out messy front doors that warp with the first few fires and drop ash at your feet. A 4-sided, brick lined firebox is a strong firebox.
Second, we know that ease of operation and temperature control are some of the most important factors to grilling good food. Operation is simple. Build your fire directly in the center of the firebox, add your food to the grate, and seamlessly control temperatures by raising and lowering the cooking grate with the hand wheel. When you let go the wheel, tension is held by our proprietary ratchet crank which can hold upwards of 250 lbs. Air enters the grill from above the rim and is retained by the brick lined firebox to drive up the heat. We’ve eliminated unnecessary vents that add cost but no functional benefit. Stoke your fire with a poker, add more fuel as needed with the grates lifted and lower the grate over the embers to finish your cook. The large upper rack is perfect for offloading, warming and resting finished meats.
Third, we construct our grills from scratch, one at a time in the USA. We use high quality 304 grade stainless steel for ultimate rust resistance, before executing a thorough passivation finishing process to achieve a final product that is shielded from destructive rust for the long term.
